Guests begin with a caramelized goat cheese tartlet served with winter greens and a chili-walnut crunch, followed by medallions of winter cod on Beluga lentils with paprika foam. The main course presents a duet of duck – roasted breast and confit ragout – paired with Riesling apples, Champagne cabbage, honey jus, and potato dumplings. Dessert is a signature creation: Mörwald’s chocolate craquelin with fruit cocktail and cassis sorbet. A vegetarian menu is also available, and beverage arrangements can be reserved in advance.
