Today we will come into contact with an Umbrian tradition: butchery. That of the pork butcher is a very ancient profession, and Umbria, in particular, has managed to make it a real culinary art renowned since Roman times. Our chef will talk about the anatomy of the pig, the different types of cuts and will teach us all the secrets of this culinary tradition: from the basic techniques to the processing of the meat, up to the salting and maturing stages, and the making of sausages. At the end, we'll enjoy a well‐deserved lunch with the results of our work and other typical Umbrian products! Perugia, a lovely city with numerous monuments and places of interest: we'll start from the underground Perugia under the Rocca Paolina to learn the details of the ancient city, then we'll stroll along Corso Vannucci, the main street of the historic center and the place where the main events take place, with all the buildings and monuments of greatest historical, artistic, and architectural interest.
